This is a simple way to work with this pretty wet dough.
Ingredients - Serves 6
Mix the yeast, castor sugar and water together. Leave for 5 mins.
Place the flour in a mixing bowl and add the above wet mixture. In a kitchen aid, mix for 5 minutes making sure to scrape the flour from the bottom to incorporate into the mixture.
Cover the bowl and leave for half an hour before placing in the fridge overnight.
The following day take the mixture out of the fridge one hour before cooking.
Gently scrape it into the tray and leave for half an hour before checking it has spread into the corners. If it has not, gently stretch it.
After an hour it should have grown some. It is ready for cooking.
Sprinkle the top with olive oil and then press into the dough with your fingers to give it the trademark dimples.
Cook at 220c for 25-30 minutes. Turn every 10 minutes.
